Gingerbread Ice Cream

This delicious ice cream with a mousse-like, yet hard texture is just the right thing for this time of year! I especially enjoy eating it with caramellised sugar and almond splits.

Ingredients (4 Portions):
-100g Chocolate Gingerbread without oblate
-1 Egg
-1 Egg Yolk
-75g Sugar
-1 TS Gingerbread spice
-1/4 l sweet cream

Instructions:
1.Cut gingerbread in small cubes
2.Add gingerbread spice while whisking  the egg, egg yolk and 50g of sugar first in hot, then in a cold waterbath
3.Fold in the gingerbread cubes
4.Whisk the cream until it is stiff, adding the remaining 25g of sugar. Fold this under the gingerbread mass
5.Fill the 'dough' into four small forms and freeze for 3 hours
6.Dip the forms into hot water for a few seconds before tipping them onto plates
