Mango-Shrimp Salad with Tomatoes




If you're lookig for something different to your typical green salad, then this is just the right thing! It's simple, quick and fresh! Not to forget the colour combo which easily stands out from all the usual green. I have to admit that I already made this recipe last summer but only posted it now because I thought that it would fit well into this time of year....-well besides the fact that I didn't even have this blog last summer! But what I mean is that spring stands for new, refreshing colours and scents and that this salad somehow expresses all that.

Ingredients: (4 servings)
-2 mangos, peeled
-6 tomatoes
-8 king prawns, peeled

For the dressing:
-6 Tbsp. balsamico vinager
-salt and pepper
-2 Tbsp. olive oil
-150 ml plain yoghurt


Instructions:
1. Cut tomatoes and mangos into small pieces.
2. For dressing, first add the salt and pepper to the vinager. Then add olive oil in small amounts while whisking, making sure that they become homogeneous. Mix in yoghurt. 
3. Arrange the mango pieces on the middle of the plate. Put tomatoes above, making sure that one can still see the mangos underneath. Place king prawns ontop of this. Drizzle the dressing along the edge of the plate or directly around the food.
