I don't think I have to say a lot about this recipe-the pictures speak for themselves.....And I certainly don't have to add that the nutty yet fresh taste of this pesto makes you want to eat it all day!
-4 garlic cloves, halved
-9 dried tomatoes
-1 bundle of parsley, (around 150g)
-200g walnuts, roughly chopped
-200g parmesan cheese, grated
-3 Tbsp Olive oil
-salt and pepper
-500g spaghetti, cooked 'al dente'
1. Use an appropriate kitchen mixer to grind tomatoes and garlic. Add parsley and walnuts making sure that the ingredients are properly mixed.
2. Add around 50g of parmesan and the oil. Salt and pepper to taste.
3. Mix into hot spaghetti and serve with the remaining parmesan.
