Rhubarb Compote with Yoghurt









I have to admit that I'm not really the biggest fan of rhubarb myself. But there are still a few recipes that even I love. Like this simple rhubarb compote that fits to almost every time of the day! You can eat it with müsli for breakfast or a cup of tea in the afternoon. It also tastes good with vanilla ice cream, vanilla pudding or cake!

Ingredients:
-6 rhubarb stalks
-5 Tbsp. sugar
-4 Tbsp. apple juice or raspberry brandy
-1 Pkg. vanilla sugar
-1 Tsp. cinnamon
-100g natural yoghurt

Instructions:
1. Cut rhubarb stalks into thin slices.
2. Melt sugar in a large pot and add rhubarb. Stew for about two minutes. 
3. Add juice/brandy and leave to simmer at a low temperature for 15 minutes. Sweeten with cinnamon and vanilla sugar.
4. Fill yoghurt into a tall glass and pour the rhubarb compote on top.

If you want to have a real drink instead, the rhubarb also makes a great smoothie combined with berries. All you need is around 4 Tbsp. of rhubarb compote, 4 Tbsp. of frozen berries and  1 cup/5 Tbsp. of apple juice. Blend in a mixer until smooth.
