Pappardelle with Figs, Gorgonzola and Italian Ham

 






I absolutely adore figs, so I  couldn't not dedicate a post to the delicious fruit. I often just eat it by itself, as marmelade or in tarts, so mainly in a 'sweet' environment. That's why I thought it would probably be a good idea to try something completely different and confront it with some rustic italian ham, intense gorgonzola and simply tasty pappardelle!

Ingredients (2 Portions):
-200g pappardelle
-5 figs
-150g gorgonzola
-5 thin slice of italian ham (parma,..)
-2 Tbsp. honey
-2 Tsp. mustard
-3 Tbsp. grapefruit/orange juice
- 3 Tbsp. olive oil
-salt & pepper

Instructions:
1. Boil salted water and cook pappardelle according to instructions on package.
2. Cut figs in thin slices, roughly chop gorgonzola and ham.
3. For the sauce, mix together honey, mustard, juice and oil. Add salt & pepper.
4.  Carefully fold figs, gorgonzola and ham into pappardelle. Spread sauce on top and serve!
