Cauliflower Pan







I actually only know cauliflower in one way: simlply cooked with a creamy, bechamel-like sauce. That's the way my mom always prepares it and the way I like it the most. But I never got the recipe for that method, so when I moved out cauliflower never made its way onto my standard shopping-list. Until I came across the idea of cauliflower couscous, I think I even only bought cauliflower once or twice in 2 years... so I guess I'm not the biggest cauliflower fan! But let's get back to cauliflower couscous: Basically it's like couscous only with everything in it apart from couscous! You can go for paprika, tomatoes, maybe even some mint and sunflower seeds! At first, I just wanted to make myself this raw cauliflower couscous. But I found this raw couscous salad a tad too raw for my taste. That's why I decided to 'pimp' it up with some chiped potatoes and frying the whole lot in a large pan! I hope you like this new cooked version of cauliflower couscous! Cauliflower will definetly be on my shopping list more often in the future....

Ingredients (makes one large pan):

For the couscous:
-1 large cauliflower
-1 yellow or red paprika
-3 medium-sized tomatoes 
-1 handful sunflower seeds
-olive oil
-salt & pepper

For the potatoes:
-7 large potatoes, cooked
-1 onion

Instructions:
1. Cut cauliflower into very small, couscous-like pieces. Chop paprika and tomatoes. Mix in a large bowl with sunflower seeds, caulflower and spice with salt and pepper.
2. Cut the potatoes into small cubes. Glaze the diced onion in a large frying pan. Add the cauliflower couscous and fry until golden. Fold in the potatoes and continue frying for 5 minutes.

  1. Wow! I will definitely try this soon! I am not really a fan of cauliflower and even walked past it on the market on Saturday. Next time I come across it, I shall try this though!
