Hummus topping with Dates, Pesto and Arugula












It really seems like I'm not really a huge fan of 'winter' recipes when regarding my previous posts. I actually am, but somehow it's not really being reflected here at the moment. Maybe that's because I consider winter the time between November and New Years, and everything after that is classified under 'almost spring.' Do you think the same way? 
So if you happen to be on the lookout for some spring inspiratons, a fresh kind of bread topping might just be the thing for you! Of course this topping will also feel at home in a wrap, on a sesame bagel or in a tortilla - but I guess that's up to you :)

Ingredients (2 bread slices):
- 2 bread slices of your choice
- 3 tbsp. hummus dip
- 1 tomato, cut in thin slices
- 50g feta cheese, crumbled
- 2 tsp. basil pesto
- 1 handful arugula
- 6 dried dates

Instructions:
1. Spread hummus dip on bread. 
2. Top with tomato slices, cheese, pesto, arugula and dates.
Alternatively you can grill the bread before and use cream cheese instead of hummus.
Enjoy!
