Chickpea Salad

I've been meaning to post a recipe of a chickpea salad for quite some time actually. When I made it again this weekend I thought it was about time to take some pictures of it before it was all gone! So here you have one of my all-time favourite salad recipes, one with a nice oriental touch!

-400g chickpeas, sieved
-3 medium-sized tomatoes
- 1 small onion
-1/2 bunch coriander
-3 tbsp. olive oil
-3 tbsp. balsamic vinegar
-lemon juice from half a lemon
- salt and pepper

1. Chop onion, tomatoes and coriander. Mix ingredients in a large bowl.
2. Blend oil, vinegar, spices and juice - works best in a small jar with a lid.
3. Fold sauce into salad.
