Vegan Energy Balls
Truth be told, everyone has cravings every now and then. I have a big sweet tooth when I am studying, so I stack up on chocolate bars right before exam periods start. But as we all know, chocolate isn't the healthiest option. Especially when high concentration levels are required, it is important to eat nutritious foods. Like many nuts, almonds contain heart-healthy unsaturated fat and dietary fiber, as well as zinc which can boost concentration levels. Combined with the natural sweetness of dates, this is a true energy booster!
Of course, chocolate will always be my number one choice when it comes to a sweet treat, but these energy balls might just make it under the top 5...
1 Tbsp. coconut oil
3 tbsp. cocao powder
1. Melt the coconut oil on the stove or in the microwave. Combine with dates and almonds in a food processor and blend until smooth (scraping down the sides a few times as you go if needed).
2. Form tablespoon sized balls and cover in cocao powder.
3. Store in the refrigerator for up to 1 week.
